Authentic recipe of Döner Kebab step by step

I love Döner Kebab, what I don't like so much is not knowing what those who prepare in the establishments that have opened all over our geography carry. So since I discovered the spices for kebab in Condiments Sancan I prepare them myself at home and so I can put the amount that I want without being a calorie bomb.
I encourage you to try it, surely you are surprised. And the best, you will surprise everyone at home.

Döner Kebab Ingredients:

500 gr of lamb or chicken (I used lamb neck)
1/2 onion
1/2 green pepper
Spices for kebab
Feta cheese (optional)
Kebab yogurt sauce (recipe at the end of the post)
Red sauce for kebab (recipe at the end of the post)
Pita bread

Döner Kebab Preparation:

The first step is to check the meat and remove all the bones it may have, then we chop it (if we buy it chopped we will save this step).

Add the onion and chop again, and the same with the pepper.

We remove the meat to a bowl and add the spices, knead with clean hands so that all the spices are distributed equally.

We take portions of the meat dough and squeeze them well around a skewer stick. We place them in a fountain and let them rest 2 hours in the fridge so that the meat takes the flavors well and becomes firmer (if we don't have time nothing happens if it is not allowed to rest).

Then they sprinkle a splash of olive oil on top and they are made in a hot plate.

Ready to shred inside the pitas together with lettuce, feta cheese and sauces to taste.

Recipe Kebab Yogurt Sauce:

4 tablespoons Greek yogurt
4 tablespoons mayonnaise
Garlic and parsley very chopped
Cumin powder
Curry powder
a pinch of salt

Mix all the ingredients and let stand in the fridge.

Red Kebab Sauce Recipe:

400 gr of crushed tomato
1 teaspoon ground black pepper
1 teaspoon oregano
1/2 teaspoon ground cumin
1 teaspoon of sugar
2 teaspoons salt

For the preparation the first thing we are going to do is put a good jet of oil in a pan and add the crushed tomato with salt and sugar.

We will let simmer until tomato is perfectly cooked. This is about 15 minutes, but it is better to try it to see that it has the point we want.

At this point we add the spices and cook 5 more minutes. If we see that we are too thick we can put a little water to lighten it.
