buffalo cauliflower wings Ingredients:

FOR THE COLIFLOR

1 small cauliflower (1 pound or 5 cups of florets)
2 tablespoons of oil such as avocado oil, grape or olive oil
    1/2 teaspoon fine sea salt
1/4 teaspoon fresh ground black pepper

FOR Buffalo Sauce

    2 tablespoons unsalted butter
2 1/2 tablespoons hot sauce, such as Frank's or Crystal
    1/4 teaspoon garlic powder

buffalo cauliflower wings Preparation:

Heat the oven to 425 degrees Fahrenheit. Cover a baking sheet with parchment paper, aluminum foil or a silicone baking mat.

Cut the cauliflower into florets, rinse and dry.

Add the florets to the baking sheet, then mix with the oil, 1/2 teaspoon salt and 1/4 teaspoon freshly ground pepper.

Spread them out, facing so many of the flattest edges down on the baking sheet so they brown well.

Roast, stirring after 15 minutes, until the edges are crispy and brown and the stems are soft, 20 to 25 minutes.

PREPARE Buffalo Sauce

When the cauliflower is almost ready, prepare the buffalo sauce. Melt the butter in a small saucepan (or use a microwave).

Slide the pan with butter melted from the heat and then add the garlic powder and the hot sauce.

TO END

Mix the buffalo sauce with the roasted cauliflower and then put it back in the oven for 5 minutes. Serve immediately with celery and a creamy sauce such as ranch or blue cheese.

Recipe Notes

Making a large batch of buffalo sauce: this homemade buffalo sauce lasts for weeks in the refrigerator.

Dairy-free / vegan recipe: Replacing butter with a vegan butter substitute should work. (We have not tried this).

We have tried olive oil and we did not like the taste. It tasted too much of olive oil and it got a spicy flavor that the butter seemed to soften.
