Creamy pumpkin Fettucine

750g pumpkin (peeled and chopped into small pieces)
1 onion
1 clove of garlic or 1tsp minced garlic
1 1/2 - 2 cups vegetable stock
1 cup cooking cream

Put pumpkin, onion, stock and garlic in the slow cooker on high for 2 -3hrs or until tender. I stir it once or twice during cooking.

When close to done, cook enough Fettucine sperately for your family.

Drain stock from pumpkin and reserve for later.

Season pumpkin with nutmeg and pepper to your liking.

Blend with a stick blender till smooth and add cream. If you would like it with more liquid you can add some of the reserved stock and/or more cream.

Finally stir in Fettucine to coverwith pumpkin sauce and serve.

The measurements are a guide as I usually just add whatever amount of each ingredient I need depending on how many people I am feeding.

A great recipe most people and kids seem to love.
