Pork loin stuffed with cheese and bacon

Today's stuffed loin recipe, rich, juicy and of course, easy and lucid. How else would I be on the blog? In addition and I mean it, it can get a lot cheaper and it is still very good, if instead of fresh loin tape you use low pork ribs, which is much cheaper and can be even more juicy. If you opt for that piece of pork, you have to make fillets of the same as in this piece of loin but without reaching the bone, bone from which you will release the meat at the time of serving it on the table.

For me a way to present the pork loin so that it is not dry, easy and so rich that it serves for guests.

PORK LOIN STUFFED WITH CHEESE AND BACON Ingredients:


for 4 people

    1K fresh pork loin ribbon
    8 slices of rich cheese, (Enmental, Gouda, creamy….)
    8 slices of smoked bacon
    1 juice orange
    1 glass of brandy wine
    2 tablespoons sweet German mustard (Mercadona sweet also serves)
    Olive oil, salt and pepper
    (3 sticks)

We clean the loin tape

We make 8 fillets of the tape, but without separating them completely from the piece

Salpimentamos. Spread each fillet with the sweet mustard and place, also between each pork fillet, a slice of cheese and a strip of smoked bacon,

With the help of 3 chopsticks, we prick the pork fillets at the top so that the assembly does not fall. (In the photo below of the already roasted pork I think that the chopsticks are appreciated)

We place the tape already filled and with its chopsticks in a baking dish.

we water with oil everywhere and we introduce in an already hot oven at 200º Bake 15 minutes turning around half the time.

Then, we lower the temperature to 180º and add the glass of brandy, the juice of the orange and the peels of it. Bake about 35 more minutes.

If the liquid is consumed during baking, a little water is added.

If you can give the right cooking point, which often depends on each oven, the height of the tray, the size of the piece of meat ... I assure you it is delicious, as well as its sauce full of melted cheese juices ...

If it is convenient to wait for the meat to temper a little, so that the cheese is not very liquid.
