CORNSTARCH ALFAJORES Ingredients

For a few alfajorcitos!

-150 g cornstarch
-100 g flour 0000
-80 g of sugar
-100 g of butter
-2 yolks
-1 teaspoon baking powder
-vanilla essence
-caramel
-grated coconut

Step by step of these cornstarch alfajores

1- In a bowl of your choice, we will put the butter (at room temperature), sugar and a few drops of vanilla essence. We will mix everything until it is well incorporated. You can use an electric mixer or do it by hand.

2- Once we have armed a kind of ointment, we will add the two egg yolks and we will beat again.

2- The time has come to incorporate the flour and our protagonist, cornstarch. If they can do it with a sieve in between, much better. We will also add a pinch of baking powder.

4- Now, let's get to the point. In the bowl until the dry ingredients are quite incorporated with the wet ones and then we will continue on the counter until we have a very homogeneous dough.

5- We will let our dough rest for about 15 minutes.

6- After this time, we will move to the stretching of the dough. For that we are going to use what in this channel we like to call: The technique of the capos

It consists of the following. We are going to stretch a good amount of paper film on the counter. Above, we place our bun and then above another good amount of film. Thus, between these two sheets, we will proceed to crush and stretch our dough. First with your hands and then with the rolling pin until you're quite chatted.

7- Remove the top of the film and with a round cutter (they can also use similar things like a glass) we proceed to assemble our caps and as we are working, we place them in a baking dish. Be very careful when handling the caps because the dough is very sensitive and starts to cry for anything. They will see that they have enough dough, in that case they put it back together, to stretch and so they take out more alphabets.

8- Before taking them to the oven and while it is heating, we will take the dough to the refrigerator for a few minutes.

9- After this time, we take them to the oven 180º for approximately 10 minutes. Keep in mind that the oven temperature is very important so that they are not too dry.

10- Once you see that the caps are golden brown, we will take them out. Once they are cold, we assemble our alfajores by placing confectioner's milk candy on a lid and placing another on top. If you wish, you can add the grated coconut around it. And ready!
