Thai style cucumber salad


Cucumbers with coriander, peanut and a touch of chili, bathed in sugary rice vinegar. A very Thai blend of sweet, salty and spicy flavors.

THAI CUCUMBER SALAD Ingredients:


3 large sliced cucumbers (you can peel it or not)
1 tablespoon of salt
1/2 cup of sugar, or to taste
1/2 cup rice vinegar
2 jalapeno peppers, seeded and chopped
1/2 bunch chopped cilantro
1/2 cup chopped peanuts

How to do THAI CUCUMBER SALAD:


1. Mix the cucumbers with the salt in a colander and let them drain for 30 minutes. Rinse with cold, dry water with paper towels.

2. Mix the sugar and vinegar in a bowl until the sugar has dissolved. Add cucumbers, jalapeno peppers and cilantro. Stir well in order to integrate the flavors. Sprinkle with chopped peanuts.
